Vanilla Cupcakes
Ingredients
- 3 eggs
- 240g butter, softened
- 1 cup caster sugar
- 1/2 cup milk
- 1 1/2 cup self-raising flour
- 1 tsp vanilla extract
Method
- Preheat the oven to 160oC (fan forced).
- In a medium bowl, lightly beat eggs, then add butter and sugar. Mix until light and fluffy.
- Add milk, flour, and vanilla and stir to combine.
- Beat with an electric mixer for 2 minutes, until light and creamy. Be cautious to not over mix.
- Divide evenly between 12-24 cupcake liners and bake for 18-20 minutes until risen and golden on top.
