Method

  1. Preheat the oven to 160oC (fan forced).
  2. In a medium bowl, lightly beat eggs, then add butter and sugar. Mix until light and fluffy.
  3. Add milk, flour, and vanilla and stir to combine.
  4. Beat with an electric mixer for 2 minutes, until light and creamy. Be cautious to not over mix.
  5. Divide evenly between 12-24 cupcake liners and bake for 18-20 minutes until risen and golden on top.
