Nachos

This recipe is very simple and doesn't require too much effort (which is why I make it a lot).

I highly recommend serving with smashed avocado (or guacamole) and sour cream.

Ingredients

Method

  1. Preheat the oven to 200oC.
  2. Dice the onion and capsicum.
  3. Add the onion and capsicum to a large saucepan with enough oil to cover the bottom. Cook on medium heat until onions are soft.
  4. Add beef and cook until browned.
  5. Add spice mix and stir. Add tomatoes, salsa and drained black beans and stir. Lower the heat to low.
  6. In a low rectangular nacho dish, cover the bottom with corn chips and sprinkle with a good handful of cheese.
  7. Add the meat mixture on top of the chips and sprinkle with another good handful (or two) of cheese.
  8. Place in the oven for 20 minutes or until the cheese on top has melted and turned golden brown.
