Nachos
This recipe is very simple and doesn't require too much effort (which is why I make it a lot).
I highly recommend serving with smashed avocado (or guacamole) and sour cream.
Ingredients
- 1 brown onion
- 1 red capsicum
- 500g ground beef
- 30g taco spice mix (I get the big container from costco)
- 400g diced tomatoes (1 can)
- 300g salsa (1 jar)
- 420g black beans (1 tin)
- 200g cheese flavoured corn chips (1 bag)
- Pizza cheese
Method
- Preheat the oven to 200oC.
- Dice the onion and capsicum.
- Add the onion and capsicum to a large saucepan with enough oil to cover the bottom. Cook on medium heat until onions are soft.
- Add beef and cook until browned.
- Add spice mix and stir. Add tomatoes, salsa and drained black beans and stir. Lower the heat to low.
- In a low rectangular nacho dish, cover the bottom with corn chips and sprinkle with a good handful of cheese.
- Add the meat mixture on top of the chips and sprinkle with another good handful (or two) of cheese.
- Place in the oven for 20 minutes or until the cheese on top has melted and turned golden brown.
