Chocolate Chip Cookies
Ingredients
- 1 1/2 cups plain flour
- 1/2 tsp salt
- 1/2 tsp bicarbonate of soda
- 3/4 cup brown sugar
- 1/2 cup caster sugar
- 120g butter, softened
- 1 egg
- 1 egg yolk
- 2 1/2 tsp vanilla extract
- 170g chocolate chips
Method
- In a medium bowl, whisk together the flour, salt, and bicarb soda.
- In a separate bowl, whisk together the brown sugar and caster sugar. Add butter, beat.
- Add egg, egg yolk, and vanilla extract, whisk.
- Add half of the flour mixture and stir together with a wooden spoon until combined. Add the rest of the flour mixture and gently combine.
- Fold in the chocolate chips.
- Cover the dough in cling wrap and place in the fridge for 20 minutes.
- While the dough chills, preheat the oven to 170oC.
- Line a baking tray and roll the dough into golf ball size balls, making sure to leave plenty of space between them (I do 6 per tray).
- Bake for 12-15 minutes and then it's time to feast.
