Gingerbread Cookies
Don't worry if you don't have cookie cutters, you can use a knife or toothpick to make custom shapes.
Ingredients
- 50g butter
- 1/2 cup honey
- 1 egg
- 1/2 cup brown sugar
- 2 cups plain flour
- 1/2 cup self-raising flour
- 2 tsp ground cinnamon
- 2 tsp ground ginger
- 1 tsp ground cloves
- 1/2 tsp bicarbonate of soda
Method
- Melt butter and honey in a small saucepan over low heat. Once melted and combined, turn off the heat and allow to cool.
- Combine butter mixture with egg in a seperate bowl.
- Stir in sugar, both flours, cinnamon, ginger, cloves, and bicarb soda.
- On a floured surface, knead until it becomes a fully combined dough that doesn't stick to your hands too much.
- Wrap the dough in cling wrap and place in the fridge for at least an hour.
- Preheat the oven to 160oC (fan forced).
- Gently roll dough out on a floured surface until 5mm thick and cut out shapes. Place on a lined baking tray. Repeat until all dough has been used.
- Bake for 10-12 minutes or until golden.
