Custard
If you wish to make chocolate custard, add 1 tsp of cocoa powder to step 2 of the method.
Ingredients
- 200mL milk
- Pinch of salt
- 2 egg yolks
- 2 tbs caster sugar
- 2 tbs cornflour
- 1 tsp vanilla extract
Method
- In a small saucepan, warm the milk and salt over a medium heat until a light steam rises off the top. Do not boil.
- In a medium bowl, whisk together the eggs, sugar, and cornflour.
- Whilst continously whisking, slowly add one third of the warmed milk to the egg mixture. This is done to temper the egg yolks and prevent curdling.
- Add the tempered egg mixture back into the saucepan and heat over a medium-low heat while whisking.
- The custard is ready once it starts to thicken and can coat the back of a spoon. This will take approximately 5 minutes.
- Remove from the heat and whisk in the vanilla extract.
- Strain custard through a sieve (sometimes the custard is too thick to do this) and pour into a container. Store in the refidge.
