Custard

If you wish to make chocolate custard, add 1 tsp of cocoa powder to step 2 of the method.

Method

  1. In a small saucepan, warm the milk and salt over a medium heat until a light steam rises off the top. Do not boil.
  2. In a medium bowl, whisk together the eggs, sugar, and cornflour.
  3. Whilst continously whisking, slowly add one third of the warmed milk to the egg mixture. This is done to temper the egg yolks and prevent curdling.
  4. Add the tempered egg mixture back into the saucepan and heat over a medium-low heat while whisking.
  5. The custard is ready once it starts to thicken and can coat the back of a spoon. This will take approximately 5 minutes.
  6. Remove from the heat and whisk in the vanilla extract.
  7. Strain custard through a sieve (sometimes the custard is too thick to do this) and pour into a container. Store in the refidge.
